I'm 3 years out.
Here's the best explanation that I can offer.
Trauma, swelling, from surgery keep the stomach tight. Not only the trauma/swelling, but nerves are cut and stapled off so the stomach doesn't really know what to do.
During that healing time, anything going in there is very limited.
As the months progress, your stomach "learns" how to mush down food again and work properly, move food out into the intestines.
There are some studies that show gastrectomy patients have faster gastric emptying time. But, my stomach really hasn't stretched. It's the size of a medium banana, I eat the same amount of dense protein I ate around 7-9 months post-op. I can eat a lot more of the slider foods, but that goes back to the explanation that the stomach mushes those foods down faster, and those foods just do not stay with us long.
Everyone's mileage will vary. BUT, if the surgery is performed correctly, stretching is not a major concern. If it's not performed correctly, if the fundus is not fully dissected then yes, there have been patients posting about stretching, way lax restriction.
