A Truly Happy Thanksgiving
I've been the cook for the past 15 or more years for my family and after Surgery I wasn't sure if I would do it this year. But, Thanksgiving isn't Thanksgiving to me unless I cook. So I roasted the Turkey, (of course it is very legal food these days) made dressing, store bought mashed potatoes, and even fixed my sweet potato casserole, although I used Brown Splenda instead of sugar this year. I made the family my famous Pecan Pie and made Pumpkin with half sugar and half spenda. All this to say, I ate Turkey, and a spoonful of dressing with a tad of gravy, a spoon of sweet potatoes, green beans my mother in law brought. I had one sliver of pumpkin pie and one bite of pecan. And you know what, I didn't miss a thing that I couldn't have. No big pieces of pie, no yeast rolls (which everyone said were yummy) no cranberry sauce which I love; yet I'm very content and happy with my life. At first I questioned my choice to have surgery, but I see more and more every day what a truly wonderful decision it was. Check my profile page for pics.
