Poking around with my gumbo recipe

Being from Louisiana means that there's a TON of family recipes for comfort foods, fried foods, desserts, etc that are pretty much off limits now. Since we have that nice cold rain coming through here, I decided it was GUMBO weather. I'd always made my roux from flour and grease. Can't do that now, for obvious reasons. So, I did what any other VSGer should never be afraid to do. I tinkered.

I made a "dry roux" by browning the flour to the color of peanut butter. (No grease, just stirred the flower in the pan until it browned.) I also used boneless/skinless chicken breasts and turkey sausage with some seasonings and onions. I'll skip on the rice, but fully plan on enjoying a bit of broth first, then having my chicken and sausage. Where there is a will, there is a way! hahaha

Sounds delish but I would have left off the flour and browned the grease some and had a runny gumbo,lol.

Try whole wheat flour and milk instead of grease...I am trying to leave all flour alone but I know some folks do eat some depending on where they are in the process...make sure you count the carbs...but Scandinavians make great roux like material from milk and flour....

Exactly the way I had to reinvent my gumbo.
I do the same thing and omit the rice. Anything to have that wonderful comforting meal.

I KNOOOOW! LOL When we went home for Christmas, I was only 2 weeks out. I had to smell Momma's rice dressing and I wanted boudin more than anything. Gotta get creative!

I know this was my first christmas after surgery too. Nothing could have prepared me for the endless tables of food. So I ate my protein before going to family and friends and enjoyed their company.

Sounds yummy !!

Could you use boneless skinless chicken thighs ? They may be a little more moist meat and be flavorful .

Once you get it down you have to share the recipes !!

On a personal note I hope things are moving in the right direction for your step son and that things are getting better
