An Addiction I never Realized I had!
So there is more to the story with Ezekial Bread. It comes from spouted grains so the enzymes and other health benefits you get from it far outweigh the carbs. Plus I fit it into my 40/day when I eat it. It is also made from lower glycemic grains than other breads. I don't know what the other bread is made from but I will certainly check it out.
Like you, my milk chocolate "addiction" did not start until post VSG. Prior to that it was mostly savory stuff, but cookies have always been a downfall. Now, I can't have just a piece of milk chocolate like I could before. Sigh...... but the craving one piece sets off is totally not worth it.
Now, very dark chocolate (65-83% cacoa) does not seem do this to me. So, I am able to have just a piece of this dark chocolate on occasion without triggering the cravings.
It may be the sugar in the milk chocolate that gets you. Milk Chocolate in the US by law has to be >12% milk (>14% in europe). In the US the difference is usually sugar.
I came up with a recipe I havent eaten myself yet using Whey Protein and sucralose to dilute the cacao mass down to about 70% dark chocolate. I combined that with Walden Farms peanut butter to make peanut butter cups. They had about 45 calories and 2 grams of protein per little peanut butter cup (1 ounce) .
Those got swallowed before I got one, then I discovered the Quest Cravings and never made more. But the "Whey Chocolate" actually tempered beautifully (looked like crap melted - definitely NOT a dipping chocolate). It would make a gorgeous candy bar.
I have some bariatric trekkie friends in maintenance. For the new movie coming out I was thinking of make molds of the command emblems from Star Trek and make chocolate bars in those shapes for them.

I didn't do any bread until maintenance. By Ezekial bread I assume you are referring to the kind referred to in Ezekial 4:9? Its freaking delicious!
Its pretty good nutritionally - but calorie dense (235 calories per 100g serving and 11-12g of protein, a slice is typically around 34g so 80 calories and about 4g). The calories come form the olive oil and honey traditionally used in the recipe.
