I salute eggs, too.  I am not on food yet, just liquids since being 12 days post op, but I just invested in a $50 stainless steel egg poacher.  I like stainless steal because non-stick pans are bad for you and are cancer causing.  I plan on having poached eggs be my mainstay.

For no-cook meals, my go to is shrimp ****tail. We always have some frozen shrimp on hand. For go to snacks, I always have Trader Joe's Fresh Mozzarella Sticks and Babybel cheese.

Beef jerky, string cheese, greek yogurt, and occasionally nuts

Yes eggs are good.  Also because they are known to be the perfect food nutrition wise.  Got lots of vitamins and minerals and protein of course.  The other food known to be the perfect food is cucumbers with perfect balance of nutrition.  They are still a little hard for me to stomach since surgery but once I can they will be back in my diet. 

Let's here it for Eggs and Cucumbers!!

Also easy to saute a handful of spinach with the eggs than add a little feta cheese.  Yum!
