Quest Bars - how often do you have them?

I eat 1/2 a bar most days for the fibre as well as the protein. I don't get bent out of shape about the carbs, which are almost all fibre, anyway.

The important part of your post is why you're eating them - because they don't make you sick. For you, right now, that matters more than whether the fibre is considered to be a carb you should count.

My rarely humble opinion is that "for now" that is by far the most important thing. Once your stricture is resolved you can decide for yourself if they cause you a problem. (If you find them so yummy that they make you want to eat a boxful at a sitting you should most likely not have them around)
