I thought about zucchini, too, but am afraid it just won't stand up to layering (you know it gets mushy pretty easily) and the water content is so high. I'm trying to think of something that will hold up a still have some tooth and all I can think of is high starch options.

Two thoughts......

One..... try the free form version..... this way you can grill or sear the zucchini and leave some bone to it. Free form is my go-to because it is much faster and no baking. Just make all the parts separate ...... than assemble and eat....... 

Two.... I haven't tried it yet.... it works in my head....... thin horizontal slices of Portobello mushroom......this should work in free form or baking and hold up......

Thought I would chime in as well...I would try the portabello and not waste the time with the zuchinni...I have and since the water content is high it was a sloppy mess. I think the portabello would work better and now I want to re-try it LOL

For that to work..... you would have to wear baggy grungy mechanics overalls..... Birkenstocks (I hate those with a passion) and a beanie......

Hey, that sounds like what I wear (except for the Birkenstocks) when I take Adam to go skateboarding.  :)  You should see me, would give you a whole other perspective of me.  :)  Adam told me that I am the coolest mom ever.  i love that kid.   Believe it or not, i am getting pretty good at it, all that ice skating training is paying off big.  :)  OK, I don't really wear a beanie either, and I still look kind of cute in my Penny board t-shirt.
