Crockpot meatball soup

I saw some people requested that I share this recipe, and I was considering posting it anyway. I love cooking with my crockpot, I am really busy during the week, so if I can get it together enough to get the ingredients, it is really convenient. So, here is a blog that I found that I really like http://crockpot365.blogspot.com/. I have tried several of her recipes and they have all turned out well. Today I decided to make her meatball soup.

4 cups chicken broth

3 stalks of celery, diced

3/4 cups baby tomatoes, quartered

1 cup baby carrots

1 cup frozen peas

1 cup frozen corn

12-18 frozen meatballs (she recommends italian style which I used)- you can also make your own if you want

1/4 cup pasta sauce (any will do)

Add all ingredients to a 6 qt. crockpot and cook on low for 8-9 hours. I suppose you could cook it on high to shorten the cooking time, but I'm not sure.  She also recommends not putting in the peas until 20 min. before it's done, but I did not read the directions properly and didnt do that. It was fine to me though.

You can easily make this gluten free if you need to. There are several brands of gluten free frozen meatballs. She is gluten free and says she uses a brand called Coleman Natural. I didn't make mine GF but will in the future since my husband has celiac disease.

How many non-surgical servings (1 c) do you think this makes?  I'm thinking to make for my family I'd probably need to double.

That's a good question. She didn't mention servings so I kind of had to guess. When I put the recipe into my fitness pal I put 4 servings, assuming A serving is a cup. I have no idea if it's accurate.

Thanks so much for sharing this.  It sounds delicious!  I just bookmarked it! 

I have been using My Fitness Pal's recipe tab to determine protein, calories, etc. in recipes that don't include this information.  Since I cook a lot and often make up my own new twists on meals, it's been a huge help.
