Recipes- Pad thai made with veggie noodles, chow mein made with sweet potatoe noodles

Just saw an episode of the Doctors and they featured a few dishes that looked fabulous.  The guest uses a gluten free approach and recipes do not use grain at all.  The chow mein looked amazing- made with sweet potatoe noondles.  The pad thai was made with carrot and zucchini noodles- again looked amazing.  There was a fried rice substitute that used chopped cauiflower- that looked ok.  Anyway, I just bought the book to get the recipes.  If there is interest I can post them.   The calorie comparision by the way on the pad thai was 1100 cals from a restuarant and under 400 for this rendition.  In both cases protein would need to be added for our purposes.

That sounds good! I've done the cauli-rice thing before. It's a bit tedious to run a head of cauliflower through the box grater, but it tasted good when I used it to make fried "rice."

I'm DEFINITELY interested in the recipe!

If you don't have one, get a spiral slicer. I love mine and it makes THE BEST veggie noodles out of zucchini, sweet potato, cucumber, carrot, etc. I purchased mine from Amazon: Spiral Slicer. The price varies widely and if you keep an eye on it, it will drop to mid $20s. Last summer, I used it several times a week with all of my fresh produce from my CSA.

and to make cauliflower rice, a food processor works wonders.

Veggie noodles are the bomb! In fact, I prefer zoodles (zucchini noodles) and spaghetti squash over real pasta any day. I've never been super into pasta anyway, it was just ok, but I love these. 

I also recently tried tofu noodles. I was pleasantly surprised. They are super low calories (20 calories for 4oz). My family liked them, too. I made a stir fry and I had just a few noodles (probably 3 calories worth) with my chicken and a couple pieces of veggies from the dish.

I made carbonara with onions for the noodles the other night and, oh my go**** was amazing.  At least the one bite I had was :D

That sound pretty darn good. Caramelized onions are amazingly delish! I'll have to give it a try sometime. Especially now that my 5 YO daughter finally like onions. Even raw!
