The onions are steamed. It's pretty amazing. When I was dishing up my partner told me to put more on his plate and I said, "you know these are onions, not pasta, right?" And he said, "oh. Take half off my plate please." But then he went back for a huge portion of seconds so clearly I did something right ;)

They were fantastic. They still had a good texture, but the raw onion flavor was gone. It's a pretty lovely (and easy!) recipe.

No- However, for some they work pretty well as a pasta substitute. Check out the Hungry Girl Alfredo recipe online. If you try this, be sure to rinse really well and pat very, very dry. I love the recipe when I am craving pasta, and the best part is that you have a ridiculous sized portion for 100 calories (not advocating overeating, rather pointing to how large the portion size is), and you can make it in under 5 minutes start to finish.

Here is a link to the Pad Thai- my family just finished eating it. HOly smokes was it fantastic!! Disclaimer: we are pad thai aficionados- this does not replicate pad thai IMHO. However, it is absolutely delicious! My eldest daughter can't stand veggies, and she cleaned her plate and asked for more. The recipe does not call for protein, but the hubby cooked up some chicken thighs and added it to his- made it that much better. I contemplated substituting splenda for the coconut sugar, but given our portion size wasn't worth the calorie/carb savings. Coconut amino- you can substitute soy sauce for this. Coconut sugar- substitute a sugar of your choice. Don't have a device to make zoodles? Peel the zucchini/carrot with a veggie peeler. I bought the kindle cook book of the woman who demonstrated- gluten free recipes, many substitutes for pasta and such and good looking recipes. It is called Against All Grain.
