Google making sushi rice and I think you'll be surprised. I'm pretty sure most people agree Morimoto is a pretty good authority on sushi. Here is his recipe: http://www.foodandwine.com/recipes/sushi-rice-masaharu-morimoto
The sugar helps bind the rice giving it the stickiness it requires to maintain the shape. You can't sub artificial sweeteners because it's not for taste it's for the stick. I can't imagine a sushi chef not using sticky rice.
Hm. I've always used glutinous rice to make sushi and it certainly has never needed extra sugar for stickiness. I'm glad I've asked at the places I frequent!
I did get sushi at Morimoto's restaurant in Philly years ago. Yum :D

I'm sorry to say that it doesn't surprise me that you're gaining weight. White rice is on my "DO NOT EAT LIST" so I'm amazed that you've been cleared to eat it EVERY DAY for the past week.
I checked My Fitness Pal to see what the nutritional value of a California roll is. Per piece, it's 6 grams of carbs, 1 gram of protein and 33 calories. You should be consuming more protein than you are carbs in whatever you eat.
I love sushi, but since I've had VSG, I opt for sashimi and avoid the rice. Rice is something you should avoid if you're trying to lose weight.
Your water intake is far too low. That's probably why you're retaining weight and water. Nothing is getting flushed out of your system.
Were you given any type of written instructions on what you eat or drink after surgery? Maybe it's time to sit down and review it again. If you're not tracking your food daily, you are only guessing at how much protein you're getting. Juicing is probably the worst thing you can do. I would suggest finding other options and getting back to basics.
Don't blow the opportunity you've been given by having this surgery. You can do better. Good luck to you.

Log all your food and drink for one week --- everything that passes your lips. (Don't bother if you're not going to be 100% honest.)
Then take it to your nutritionist and have it reviewed. Your nutritionist will tell you what you're doing right, and what you're doing wrong.
If you keep doing what you're doing now, you will not be successful.

Why on earth is there a question mark about being a bad girl? You should not be eating carbs (white rice), yet you've made the conscious choice to eat "only" sushi rolls for apparently an entire week. And from what you're saying, you seem to be in denial and completely shocked.
If you "know" what to do regarding carbs, I can't help but wonder what else you "know" how to follow to the T. Rice doesn't make you gain, but eating whatever the heck you want without actually paying attention to your guidelines sure doesn't help you lose.
Go back to your surgeon's guidelines ASAP and call his/her office if you need a refresher course. Protein first and exclusively until you hit that goal. Lots of water, skip the juice (empty sugar calories).
