Baked Chicken Strips Recipe
For Ruthie, and anyone else who wants to try it. It's easy
Start with boneless skinless chicken breast pieces. After removing any excess skin, fat, and the icky tendon then runs through them I like to cut them up thin and into medium sized strips.
Next, use some beaten eggs to coat them, and dip them in bread crumbs - I like italian seasoned 4C brand (try mixing in powdered parmesean and garlic powder to make them taste even better).
Then dip them back in the egg and coat it with some more crumbs.
Then spray both sides liberally with cooking spray.
Pop em in a 400 degree oven and bake about ten 15 minutes on each side until they start to turn a litte bit golden brown, and you're done.
They're high in protein, fairly low in carbs, and virually fat-free. Dip 'em in honey mustard, ranch, bbq, whatever you want - just be careful not to add too many calories or sugar with the condiments.
You can make up a whole bunch and cut up the leftovers to use as protein to add into a salad! Enjoy!
Yeah, that method works as a great substitute for frying foods. Besides being healthier and lower in fat and calories. It also sits better with me. Like some other WLS'ers too much fat and grease can make me dump just as bad as too much refined sugar....Another tip? Use this technique to make french fries, just skip the breading. Oven-"fried" sweet-potato fries are usually my favorite side dish to go along with these. Just wash up a sweet-potato cut it up into steak fry or smaller sized strips, spray em down and bake them in the oven along with the chicken - watch out not to scorch them and then season them when they're done!
Mike those sound really good. I will seriously have to try that now that I can have chicken and stuff like that now!! YAY for being alowed to eat real meat not canned meat!
