Dinner...

Hey there everyone.. Tomorrow night we are having a couple over for dinner and I am cooking.. YAY! lol.. ( I really love to cook, and I am pretty good at it..) However, I want something different to cook.. I don't know what I feel like.. Everyone's pretty easy to please. So if you wouldn't mind throwing down some suggestions that would be WONDERFUL!!! I am up for anything but fish........ Thanks!!! Tarka

My last 9 lbs!! They are the hardest to lose it seems!!!!!

I love making chicken curry! I just boil and cut up the chicken and fry up some onions, peas and chopped up potatoes in a pan and then i add the chicken and the sauce i buy from the store, i love coconut curry so i make that a lot!  While that is cooking i make some rice and i am ready to go!

I was trying to find the recipe but couldnt... so here it is from memory - its from a pampered chef cookbook... since you like to cook Im sure you can figure out how much of what there really should be. Take 4 chicken breasts... cut a pocket in each and stuff with fresh basil (usually about 4 pieces each depending on the size of the chicken) In a bowl mix some fresh chopped basil, lemon juice (1-2 tablespoons?), chicken broth (1/2-1cu), fresh garlic... I want to say there is something else - Im sure its just a lil salt and pepper... Brown the chicken in a pan then pour the mixture over, cover and simmer until cooked. Plate the chicken and pour the broth over. I serve this with red smashed potatoes (I take the easy route and use the kind in a pouch - the are really good!!!) and sugar snap peas.

Current weight - 135 (2020 I lost 10lbs due to dedicating myself to working out more and being in better shape)
