Dairy
I drink 2-3 8 oz glasses of skim milk every day, and I also enjoy reduced fat string cheese and Light & Fit yogurt pretty much on a daily basis too. I get most of my protein from dairy products.
My question is, how much dairy is too much?
I haven't had any "complications" from it, so I'm hoping its cool to continue getting a lot of it.
Anyone have any input on the topic?
i don't think you are taking in too much dairy. i use to be able to drink milk and eat yogurt, but i really can't anymore. i slowly became lactose intolerant. cheese is ok most of the time but milk is definately a bad idea. hopefully that won't happen to you.

Early out milk is a great way to get your protien. For a couple months post-op that is what I did as well. The only thing I would caution you on is the carb/sugar content. They are "good" carbs as far as carbs go - but too many can be a bad thing. Did your surgeon or nutritionist give you any guidelines for how many carbs are too many? As long as you're sticking to your guidelines you should be doing fine.

It is Hood Carb Countdown Milk and actually it is really good. It is really creamy - almost too creamy for my taste, so I normally mix it with a little bit of skim. They have a Calorie Countdown Milk that I like too. They aren'y technically milk - I think on the box they say they are a "Dairy Drink" or something like that - and I feel like a traitor to my state when I drink imitation milk drinks, but they are really good and a good way to keep the carbs down.

My only suggestion would to be work on getting you protein from other sources as well... balance out all the dairy protein with lean meat protein and/or soy proteins.
I would also talk to your NUT about their feelings on it as well :-) Basically you should strive to eat a balanced meal... since milk isnt a meal and a liquid you would have to drink it seperately... yogurt is fine and could be part of a meal but eventually you may not feel really full/stay full off something so liquidy.
