Deeeeelicious breakfast option

Now I know this wont work for all stages since its bread based... but you can modify to your taste :-) I am in LOVE with jimmy deans de-lites breakfast sammies but at $5-7 for 4 sandwiches I figured I could make them much cheaper. They also use full fat cheese so I figured I could cut some fat/calories there as well! I am at the point where I need a nice 'hearty' filling breakfast or I am just hungry all day long... these really fill me up! I typically end up eating a little more than half... or just using 1/2 of the enlgish muffin! I puchased one of those egg thingies at Bed Bath and Beyond for less than $3 (for 2)... its the little round ring so you can make round egg patties - what an invention. Thats the only 'tool' you need! For my own version of jimmy deans b-fast sammies  Eggs - or egg beaters, or egg beaters whites, or egg whites Turkey Bacon or Turkey Sausage Patties Trader Joes whole wheat english muffins I made a bunch of the egg patties on Sunday... you can add some veggies in there, and/or cheese whatever you like. Cook up the bacon/sausage. I make the individual sammies with the english muffin, either the bacon or sausage and put them in the freezer. At work we thankfully have a toaster so I toast the muffin and micro the egg/meat and put it together - super yummy, protein AND fiber packed! I dont have the nutritional info because Ive been lazy and not put it into fitday yet... the TJs enlish muffins arnt bad on the carbs - you could use just one 1/2 of the muffin if you want to cut back on the bread. The turkey bacon/sausage is low fat and depending on the egg/egg substitiute you also have little to no fat. (you can cook the bacon in the micro, on the stove or in the oven... I like mine chewy so I do stove top, the micro and oven make it crispy!) If you want to be super lazy Wal Mart sells egg patties already made in the freezer section - they are with the morningstar farms/boca burgers and there were 6 in the bag for less than $4...  each patty had 4g of fat in it but they are big - you could really cut in half and use it to make 2 sammies....  easy way to put together the sandwich if you dont want to cook! I also like to make bfast burritos using TJs Lo Carb Whole Wheat wraps - they only have 6g carbs in it (and 4g fiber!)... they are thin and light so its perfect to use and not be too bread-y!

First visit to surgeon - 288 ~ bmi 45.1
2 week pre-op 252 ~ bmi 39.5
Total lost - 153 Since surgery - 117!
Goal weight - 155 (mine) 180 (surgeons)
Current weight - 135 (2020 I lost 10lbs due to dedicating myself to working out more and being in better shape)

1/14/2025 still maintaining 135 :-)

Mmmmmmm...I've had the Jimmy Dean breakfast sandwiches before, but your healthier version sounds even better!!!!!!  I have one of those silly egg pans from Bed Bath and Beyond too and still haven't used it because I was worried the egg will get stuck in there...how do you get it out????  Just use non-stick spray??  Hahaha, it's been sitting in my cabinet just waiting to be used, maybe I'll start by making this!!!!!!!  Yummmmy! I was also thinking about a recipe yesterday while at Starbucks.  I had their Mozzarella Tomato and Basil sandwich on Cibatta bread...I took off half the bread and only ate the bottom bread, but it was sooooooo delicious and had 16 grams of protein!  So, I was thinking how delicious a wheat tortilla wrap would be stuffed with Mozzarella, fresh basil, tomatoes, salt, pepper, and a splash of olive oil and balsamic!!!!  I'm going to have to go to the grocery to buy some ingredients!

I use a nonstick skillet and no cooking spray... I have a knife that kind of has a flat top on it (bread knife maybe?) and I use that around the edge to seperate the egg out... so far its worked pretty good! I love love love tomato basil and mozz! yum

Trader Joe's whole weat wraps, tortillas, pitas - all of 'em - are the bomb! I need to go to get one of those egg thingies though, as muchas I eat eggs and egg whites, I could even more if I premade them....BTW, FYI, I was reading a story about Starbucks and changes they are making to try to boost the performance of their stock which has been crummy lately, and one of the things they will be doing is eliminating their breakfast menu, citing the reason as the odors from the eggs are detracting from the aroma that the customers have come to enjoy - stinky eggs!

I read that too... *******s! I dont drink coffee but would sometimes swing by starbucks in the morning for their LF bfast sammie and a tea... once they do away with the sammies I wont really head there all to often - not really worth the trip just for a tea IMO.

ok maybe I am just a dumbass but ....please tell me how yall are making this stuff and freezing it ?? do you make just a couple of days ahead or 5, 7 days ahead ?? are you using ziplock bags or one of those vacuum things ?? I have not been planning ahead for meals yet but am getting to the point where I am needing to because I catch myself just eatting what every is convenient. which most of the time is not anything I need to be eating ....help !!!

I make enough on sunday for the week and put them in individual baggies so I can grab and go. Ziplocks are working just fine for now... I dont have a lot of room in my freezer so I only make enough for the week because thats all that will fit!
