Does anyone have any good ideas for the purée stage? I start it tmo and even though I know I can do it, I'm just wondering if anyone has any recipes to ease the purée process?

I am in that stage too. Loving poached egg. Also any veggie soups pureed in my magic bullet. If you have a Costco membership they have a great cooked chicken in a can packed in water that is soft and easy to mash with a bit of fat free dressing. Works for tuna too. Helps to get in the protein.

Michelle I lived on chili and I still have it as a go to meal all the time now.  I used to HATE beans but my husband makes a great low fat chili and it is amazing to me now.  I always have 3oz containers in the freezer for meals when I don't have time to plan.  Egg salad and tuna salad were also good...Good luck!

Monica, I would love to have your husband's recipe for the low fat chili.

I can't tell you the exact recipe because he makes everything in huge quantities.  The key to low fat chili is we grind our own beef-usually a cheaper cut like sirloin tip-very lean and you know exactly what is in it.  I also know he uses canned tomatoes, tomatoe paste, tomatoe juice, kidney beans...he sautes his garlic, onions, celery, mushrooms and red/orange peppers in low fat chicken broth before adding it to the sauce.  Even after we cook the beef we rinse it off in case there is any fat -but it is minimal when you grind your own.  He also adds a bit of splenda to cut the acidic taste of all the tomatoe stuff...you can add spices and chili powder too it as well.   Sorry that is the best I can do!!

That chili sounds amazing, I actually took a screen shot of it on my phone and plan on heading to the grocery store to make it this wknd! I think I will use ground turkey instead of ground beef tho! (Not much of a beef eater)
