I didn't even start soft foods until I was a month out. I did 2 weeks on liquids, 2 weeks on pureed and am just now finishing up week 2 of soft foods. Foods I can have on this section of the diet are:
Pureed beef, poultry, fish or pork
Cottage cheese
Greek yougurt
eggs (any way but fried)
canned tuna, ham, chicken, or salmon
low fat luncheon meat
shredded cheese
low fat cheese
peanut butter
cooked soup beans or lentils
sugar free pudding
well cooked veggies (no tomatoes due to seeds)
tomato sauce
vegetable juice
vegetable soup
canned unsweetened fruit
banana (no other raw fruits)
fruit juice
cooked cereal
Unsweetened dry cereal
Saltine crackers
Ritz crackers
Townhouse crackers
No Triscuits, whole grain crackers or Melba toast
no bread, rolls, biscuits, buns, toast, pasta, or rice
small amounts of fats

edited to add: I'm meeting with my nut this morning. will check with her on other ideas for soft food for you :D

10 days post-op, we went from purees to 'soft food'

cottage cheese
yogurt
chicken/tuna/ham salad
egg salad
poached, flakey fish
poached or scrambled eggs
unsweetened applesauce
chili or stew with small, soft, meat pieces
ricotta bake (basically, lasagna layers without the noodles)
mashed cauliflower
soft cheeses

IfI also did things like slow-braised lamb shank where the meat was very, very falling-off-the-bone tender and moist and served with the braising liquid, but it's a cooking technique I'm good at and I knew I could get the right consistency.  It's not a 'beginner' recipe.  Later on soft foods,I  made Palak Paneer which is basically my favorite dish in the world. I made my own Paneer (cheese), etc.

I agree with Fisco, My program avoided Carbs like mad - I am not allowed to have potatoes until maintenance.  The mantra from my NUT is "No Empty Calories" - if the meal has 140 calories but less than 20g of protein I look elsewhere.

Look for High Protein, Low Cab, Low fat products like no fat cottage cheese, no fat greek yogurt, eggs (anyway but fried), etc.  If your NUT won't respond - call the surgeons office.
