Craving Salad!
I hear you, and what a great craving! I was not a salad eater o fresh veggie eater prior to the sleeve, and by week 6 that was all I wanted to eat. Still love it too :)

I liked salads before surgery but never have I craved one so badly! I've also been dying for some green beans today as well but I'm still trying to get my protein in first. I hope I continue craving veggies in the future. Chips were always my downfall before and thankfully I haven't been wanting those.....yet.

Can you tolerate cucumbers and tomatoes? Asking because a great Greek restaurant near me* offers something they call a "Village Salad" which is just chunks of cucumbers, onions** and tomatoes, with feta and Greek vinaigrette (what makes that different from Italian dressing I don't know), with optional gyro meat on top. It might hit the salad craving without the leafy green veg.

**I cannot abide raw onions at all so I always have the salad sans the stinky things. I can eat them cooked but raw makes my sleeve turn somersaults inside me. Ughhhh.

May I suggest peeling the cucumbers and not chunking them but slicing them and going slow? I think the big thing is the big flavors.
There's also a Bulgarian salad called Shopksa Salata which is the same ingredients pretty much, just cubed really small - also see recipes for "Israeli Salad" which is come to think of it pretty much the same. Any of the Mediterranean cuisines will include mixing cucumbers, tomatoes and onions in some form of vinaigrette, and most call it uniquely their own and aver that it has nothing to do with what the neighbours are eating!
