ricotta cheese

I get to have ricotta cheese next week. YUM. I just don't know how to cook it. I've always used it in Italian dishes. Can I just microwave it in a bowl? Or cook it alone in the oven?

Hi!  I am a little over three weeks out from my surgery and I also had ricotta as one of my "can do" foods at 2 weeks.  I love making a ricotta bakes (modified from a recipe on the blog, The World According to Eggface)

In a oven safe casserole dish (yep, I only use one dish!) I mix:

1 Egg (beat the egg before adding other stuff)
Mix in 3/4 Cup Ricotta and 1/2 Cup Mozzarella Cheese

Once all of this is mixed well, form into a small loaf and cover with a small amount of marinara sauce (I use jar sauce) then sprinkle more Mozzarella on top.  Put in the oven (350 degrees) for about 20 minutes.  (I like my cheese brown on top so I do a little longer...) 

This is sooooo Yummy!  I know people add other stuff, but I like it kind of plain.  As you progress in your foods, you can add spinach, zucchini, and other stuff....

Egg face has a lot of good receipes.  In fact, right now I am eating her ricotta pancakes yummo - you can bake it with some marina sauce for noodleless lasagne.  I have only baked with it and put it in the pancakes - I dont know about microwaving it.

i microwaved it with a little bit of tomato paste and mozzerella cheese. mmmm mixed it all up and it was so delish and it helped me feel a little bit normal ! my first 2 weeks were so rough, but this comfort food persay helped me x10 cheer up a bit :)

You don't even HAVE to cook it actually....   of course I love it nuked with marinara but I also do these versions:

Ricotta + vanilla protein powder + SF pistachio pudding + tiny bit of chopped nuts = yum

I have also just mixed in salsa or guacamole -- hot or cold its all good.

Sometimes I use half ricotta, half greek yogurt.

Hi,

I'm 4 years out and I like to use 1/4 cu*****ota cheese, 1/4 cup lf or nf shredded cheese, oregeno or basil to taste and some chopped tomatoes (optional).  Mix well.  I will eat this as is or with a few whole grain crackers.

For those with a sweet tooth that don't want to dump:
1/2 cup Ricotta cheese,  1/2 tsp Vanilla extract, one packet of splenda and one TBS of defrosted frozen (mushy) strawberries.  Hmmm Good.

here's a mock pumpin pie

ricotta, pumpkin pie spice, and splenda brown sugar. experiment with amounts for your tastes.

WOOOOOW! YOU GUYS ARE SO AWSOME! I HAVE BEEN STUCK EATING COTTAGE CHEESE, EGGS, TURKEY, CHICKEN, AND TUNA!
I SOMETIMES FORGET ABOUT CERTIAN FOODS! I NEVER THOUGHT TO EAT RICOTTA CHEESE! I WILL MOS DEFFINETLY BE PUTTIN THAT ON MY GROCERY LIST!!!! YUMMO!
