OK Recipe Time Breakfast Super Scramble High Protein

low fat, high-protein version

Serves 1
Ingredients
Nonstick cooking spray
2 white mushrooms, sliced
2 teaspoons red bell peppers, diced
1/2 cup egg whites
1/4 cup firm tofu
3 tablespoons low-fat cheddar cheese

1. heat nonstick pan over med heat. Spray with nonstick cooking spray and add mushrooms and peppers. Coo****il tender, about 2-3 mins.

2. add eggs and tofu. Scramble eggs over low heat with wooden spoon until done, Approx 3-4 mins

3. add cheese and serve

per serving: Calories: 190, Fat 7g, Protein 28g

 Sounds good! I start soft foods in 2 weeks, so I will try this..with my beloved Tabasco, of course:)
