Last night I had my first experience with...pigs feet. I grew up in the south, but stayed away from feet and "innerds". I'd only seen them displayed in jars of suspicious looking pink liquid in seady five and dimes. Only a visit to youtube and my quest for the perfect fat/protein power punch helped me build up the courage to try this culinary feet (get it? lol) Well.....

 

 

 

I LUUUUURVED IT!

I'm not going to be eating them everyday (obviously), but I can't believe it took me so long to find this delicious delicacy. I must warn that these are not for everyone, but when cooked properly, they are a flavorful, complex, textural delight. I'm not planning on chumping on chitterlings any time soon, but the feet get a thumbs up from me.

I love pig feet too... but I put them in posole (just like menudo)
