The book from TWH says no hard cheeses, but I do like the protein in cheese and ok, I'll admit it, I love the taste. I'm so over cottage cheese I could scream, so which cheeses went down well for you during the puréed phase?

I am not at the puree stage yet, but let me tell you I have every intention of making a Baked Ricotta dish when I get there, lol

Basic Recipe :

1 cup ricotta cheese 1 egg 1/2 cup shredded Parmesan cheese some fat free mozzarella if you want. Then add whatever you want for flavor...pured garlic, even some pureed crab maybe? If not, top with some pasta sauce? I think I am going to go with pureed crab and top with some shredder parm/mozzarella cheese, and crackers on the side =)

Laughing cow and then that processed crap that I like to call plastic would be okay.  Ricotta and cottage cheese as well.  Cream cheese would be soft enough as would ones like brie and camembert. I'd stick with laughing cow since they have so many flavours now and you won't be eating much anyway.

I went with the laughing cow and Philadelphia cream cheese.  They have some good low fat and fat free flavours.  Hard cheeses are not good in the purée stage.
