Puréed phase - cheese

I am not at the puree stage yet, but let me tell you I have every intention of making a Baked Ricotta dish when I get there, lol
Basic Recipe :
1 cup ricotta cheese 1 egg 1/2 cup shredded Parmesan cheese some fat free mozzarella if you want. Then add whatever you want for flavor...pured garlic, even some pureed crab maybe? If not, top with some pasta sauce? I think I am going to go with pureed crab and top with some shredder parm/mozzarella cheese, and crackers on the side =)Laughing cow light cheese is soft and tastes good.

Laughing cow and then that processed crap that I like to call plastic would be okay. Ricotta and cottage cheese as well. Cream cheese would be soft enough as would ones like brie and camembert. I'd stick with laughing cow since they have so many flavours now and you won't be eating much anyway.
