Ok, Em, you said perhaps you weren't going to be able to start the post all the time for a few weeks, so I'm going to jump in today...

It's a beautiful morning here in the Philadelphia area, I hope it is for you as well. I began the day walking the track with my colleague, but much to my sadness the shirtless, glistening man did not appear today .

You're busy early as always, Karen! I can't lie, usually it's just old men at the track and a few women, but today it was deserted!

Two weeks away, how wonderful - though stressful I'm sure. Will you be in a hotel or house/condo situation for the time? I would think if you have a kitchen it will be a little easier, but still...

It is wonderful!!!  I am a lucky girl!!!  We are staying in a hotel for two nights on property at Universal Studios, then transferring to a condo.  I plan on having breakfast in the condo most of the time, and I have studied the theme park menus so that I can make wise choices.  I am bringing lots of healthy snacks with us and I feel very prepared.  I've got this!!!!!

You should definitely try it, I've really enjoyed it. This recipe says it's 9 servings, but I cut mine into 12, which has been a great portion size for me. Here's the link.

Recipe looks amazing!  Is there any nutrition info available?

I put all my food, meals, recipes into MyFitnessPal and that does the nutritional info for you... I made mine with EggBeaters as that's what I had on hand, but the rest I did as the recipe suggests. Here's how my stats worked out (my original post was hard to read, so I'll just give you the highlights), with 12 servings you get 153 calories, 9 grams of fat, 6 carbs, and 12 grams of protein.
