enchiladas???

I am on soft foods (not puree). I was wondering if I can eat part of a beef enchilada. I can have ground beef but I'm not sure about the corn tortilla. I know flour tortillas are BAD but what about corn?

Sometimes I make thin scrambled eggs in a tortilla shape....roll the goodies inside (like an omelet) and then put the sauces over. YUM!

Try the Carb Balance Tortilla, they are pretty good and have very low carbs.

 I was told no breads, pastas, rice during weight loss phase. It expands in your tummy too much and many have said how sick it makes them. I limit these things because i am worried it may be a way to slip into bad habits. Also, meat is not in the soft food phase and too much cheese isn't healthy.

Mandyc1975, I used Dr. Nick also and you are right that lean ground beef or turkey is in the soft food stage but I am not so sure about eating a tortilla at this stage. I am 3 months out and I still have not eaten any carbs except for what is naturally in food. The corn tortilla has cabs also. If you are going to eat it anyway I would go with what the previous post said and eat the low carb tortilla. Good luck on your journey!

Thanks. I'm going to wait on the enchilada. and when I do eat it, I'm going to use the low carb tortillas and make it like a little pizza instead of an enchilada that way, I get a little tortilla flavor, but not as much carbs. With the rolled enchilada, you get 2-3 layers of the tortilla and that's definately too much.

I had some Chipotle soft tacos in that early phase, but left the tortilla behind (now I might have half of the corn tortilla if I feel like it) and had restaurant enchiladas a couple of times, but again, just ate the insides and that was plenty. I do use thin corn tortillas as the crust for a pizza once in a while and that works OK in the "real food" stage.
