Looking for Low Carb Recipes for Party??
VSG on 09/13/12
I am going to a birthday party this weekend and want to take something that is low carb, that I could eat a bit of. I was thinking maybe a low carb dessert of some sort, like a pumpkin fluff or something like that. Anyone have any ideas or recipes? I would love to find something to make that would have some protein in it too, but as long as low carb, that would be a start I guess! If I can't find that, I could do a hummus dip or anything else. Totally open to any and all ideas!
I have two others parties in the next couple of weeks and am planning to take White Chicken Chili to those.
Thanks!

All of these will kill at your parties:
Here are two recipes of my own that I think are very bariatric friendly and everyone loves (seriously I have never had one person say they didn't love these:

http://www.mybigfatfoodie.com/latin-5-bean-salad-or-as-i-lik e-to-call-it-cinco/
This one is certainly low carb, but has fat in it. Maybe try with reduced fat mayo and some leaner meats anyway, this also is a crowd pleaser.

Thanks for the recipe links! I will have to keep those handy for the future.
I am just at 4 weeks postop, so I am wanting to take something that I can eat a little bit of, because I assume the rest of the food won't be friendly to my current food stage, since I am just progressing to solid foods.

My favorite low carb pumpkin recipe is this pumpkin bake, it tastes exactly like pumpkin pie filling, it's VERY good:

And when you're on full solids:

Oh and deviled eggs!

My cousin showed me a GREAT recipe that I love:
Sugar free/fat free whipped cream
Sugar free jello pudding mix: I use the white chocolate flavor, but you can also use the cheesecake flavor.
Fat free Milk
Splenda
Add amount to taste. I usually do one box of pudding mix per one one regular size container of whipped cream, and I do maybe 1-2 cups of milk....don't really measure it.
Chill in fridge for 30-60min. It thickens considerably, so add more milk if you'd like to thin it out.
Makes an AMAZING fruit dip---great with apple's, strawberries, melons. I even tried it with bananas, but those are super high in sugar, so don't do it so much.
If you decide not to use it for the party, this is definitely an AMAZING recipe to keep on hand when you want that "something sweet".
