Egg Salad

Not sure I should post a recipe here, but this is my favorite. 

4 boiled eggs

4 oz. cream cheese, room temperature

4 t. pickle relish

2 pkt. Splenda (optional)

Salt & Pepper

Mix all together and chill.

I love new recipes - thanks!!  I have never thought of using cream cheese in egg salad.  That is a wonderful idea.

We love recipes!!!!!  I had egg salad for lunch yesterday but I used a little mayo (no sweeteners) and it was delish! I also only used the yoke from 1 of my 3 eggs.

Isn't this just perfect timing?  I've been wanting to make egg salad but am out of Mayo - BUT - I have cream cheese!

This is FANTASTIC!  I'm a little leary of cream cheese (haven't always been a big fan) as sometimes I think the flavor can overpower.  BUT - I boiled 7 eggs, pulsed them in my baby food processor, added 3 oz cream cheese (figured I can add more if needed) and mixed.  I then added salt and pepper.  I didn't have any pickle relish so added a little minced onion.

Oh - my - yummy! 

Now it's got me thinking.  What about using flavored cream cheeses (as long as carbs stay low)?  Like a garlic, etc...

Oh yes, the flavored cream cheese would be good.  Until recently, I didn't like eggs at all but I love this Egg Salad.  Isn't that weird?

No - I've always HATED scrambled eggs.  After surgery I love them... our tastes DO change!

I'm thinking a onion/chive cream cheese or jalepeno....
