Week 2 - Soups

I love summer because this is when I get the urge to make cream soups. Now can you imagine how happy I feel that it is Summer am getting the craving for soups and Voila this week YEP I get to start my soups.

Last night I made carrot soup.  Normally Carrot Cream Soup is for the Winter but I love it in the Summer.

Ingredients
Serves 4 to 6
1 pound baby carrots
1 small onion - finely chopped
3 celery stalks
1 garlic clove - peeled
4 cups low sodium vegetable broth
1/4 cup of brown rice
1/2 tsp cumin powder 
2 tbsp crushed ginger or a piece of  ginger. (more or less you don't like spicy)
1/4 cup Skim Milk (this used to be of cream, which back then I could have. had to modify recipe)
fresh cilantro 
 
Put everything in pot except milk. Take out the cilantro after about 10 min of cooking, otherwise the cilantro will overpower the ginger. I love ginger!!! Cook until carrots and rice are soft. Mix everything in blender slowly add milk. Then share it with someone you love. One may need to add more veg. broth because the brown rice soaks up more liquid than white rice.

So this is what I made last night. Tonight I am going to make Grilled Vegetables and Asparagus Soup. YUMMY

So now on to weight loss news.

I have lost 11 pounds since last Monday the day of surgery. I actually started loosing weight on Wednesday of last week once I was released from the hospital. This last week has been uneventful. (besides losing weight) I had a little oozing on one of my scars and I have gas. When I say gas I mean rumbling noises that it doesn't even sound like gas its so funny. Very loud. Thank God I sit by myself in a cubicle and my stomach can do all the noises it wants. In the morning is when the gas comes out, right after I get up. I sound like a bomb in the bathroom. Several times hubby has asked is everything OK.  I guess he wants to make sure the intestines did not fall in the toilet (sorry)

On Monday I started to take my multi-vitamin and calcium, holding off on iron. I am 1 week early but I feel better. I have energy and I have not gotten sick. I hope I am not killing my insides by taking the vitamins. Hummm...maybe that gas is from the vitamins?  

The scars are itching like crazy. I get home, take my shirt off and pants and sit on the couch and cover my stomach with olive oil, it is the only thing that stops the itching. While working I add lotion but olive oil is the best I feel like gross sitting in the couch with my belly out there but gotta do it.

On a more personal note You may want to skip this paragraph; Yeast infection. Because of being diabetic I can get one if someone looks at me wrong now with antibiotics it is a sure thing I am going to get one. While in Mexico I bought some stuff because I was feeling something, nothing too drastic but better to be safe than hurting. It did calmed down, when I got back home " it " was feeling a little more present so I took the pill that was Saturday. Today I think I have a full blown one, the pill did not work and neither did the stuff from Mexico. So Friday when I get stitch removed I may ask for another prescription.

I had to cancel my appt for the stitch removal because I had no ride to doctor. Now I am going Friday.  Oh can't drive for 3 weeks. This is my second week. My husband is driving me to work and back, he will not let me drive no matter what. He works a mile away from home, he actually walks to work and I normally drive. Now he is going out of his way to bring me to work ( 8 miles) and is leaving a hour early so I dont have to sit wait for him. My brother actually works across the street from me and lives a mile away from me but he comes to work at 6AM and leaves at 6:30 PM. Husband said nope this is too long of day for you. Thank god for great husbands. I got lucky with this one.
