Question:
Does anyone have a good recipe for salmon steaks or salmon cakes?

I am looking for some tasty recipes for different fish dishes. In particular, I'd like to know a good, tasty way to cook salmon both salmon steaks and salmon cakes. I also have a lot of frozen white fish in my freezer and would like some ideas as to how to prepare them either in to cakes or something else tasty. I don't know what kind of fish that it is. As fish is loaded w/ protein and very low in calories and fat I'd like some ideas so that I can use it on an ongoing basis. Thanks!    — kathy S. (posted on August 27, 2000)

Try "WWW.FOODTV.COM" they have some great recipes I watch the food network everyday. Emeril Lagasse has some good ones for salmon. Hope this helps :-)

Yes... 1 can of salmon ( get rid of the bones and stuff) 1 tablespoon of Old Bay Seasoning, or seafood seasoning 3oz. of chopped onions, if you can stand them Pinch of salt Pinch of pepper 1 egg 1 tablespoon of white corn meal Mix all together, patty and bake in the oven till golden brown at 375. Mine take about 20 mins or so in a preheated oven. I like mustard as a garnish but cocktail sauce or plain they are good. They are even better if you have a George Foreman Lean Grillin machine, just add a little water to the mix, 1 tblspoon. And grill. Yummy.

There was a tasty looking recipe on food tv on a show called "In Food Today". I believe the lady used pink salmon-canned, onion, parsley, salt and pepper, cheddar cheese, bread crumbs, mustard, and then fried them up. It looked yummy and if you want the recipe...it still should be there but when I looked they said they would only have the recipe for a limited time because it is copywrited. Good luck.....Julie R

Salmon isn't hard to cook...just start cooking it any old way. Salmon is very forgiving. I used to like Salmon cooked this way...get a big ole hunk of fish...put in a glass casserole dish...slather top with thin layer of mayo...cover with lemon pepper...cover with foil and bake for 20 min. OR...poach the thing...slap the fish in a pan...put in some water--about 1/2 way up the side of the fish...add a little bit of lemon peel-or lemon juice, some peppercorns, a few raw rings of onion, a dab of butter...but the lid on...and poach that thing for 10 minutes or so. OR...for a change of pace marinate salmon in teriyaki sauce for 15 minutes...then poach in 1/2 teriyaki sauce and 1/2 water. Grilling works well too...just spread with a litte butter (or a burst of PAM) and pop under grill for about 5 minutes on each side. BBQ the same way...only outside and with the heat under the salmon! PS..leftover salmon is great in scrambled eggs..you might want to add a bit of spinach, and a few onions in there too.

Not a salmon cake...but yummy! I love taking lox 4 oz or so and grinding in food processor until it's pretty much a paste. Then, I add a package of low fat cream cheese, some lemon juice and chopped fresh dill to taste, mixing until all is well combined. I then put the mixture into a pastry bag with a large star tip and pipe it into chinese pea pods that have been split on one side, or I pipe it onto cuke slices, or onto a wheat thin. Mind you, I'm still pre-op, so we'll see if I'll be able to handle it post-op. But, it is yummy!

Salmon Patties like Mom used to make: 1 can of sockeye or pink salmon, 1-2 eggs, about 2 cups of ground up Ritz crackers, one minced onion, 1/2 cup of fresh parsley. Make into patties and fry up in a tiny bit of olive oil or spray with Pam and bake until done. Serve with ketchup and a mac n' cheese side dish. Fondly,

Would you believe I made salmon cakes for the first time in my life the other night? How timely this question. 2 cans of salmon, 2 eggs, 1/4 cup bread crumbs, 2 Tbs. of fresh dill, 2 Tbs. fresh chives, salt and pepper to taste. Brown them in vegetable oil and top them with just a smidgen of hollandaise. Kids loved them! Salmon steaks on the grill are awesome too.
