Topic: Recipe Wednesday - Or Not

Kimberly's been very busy lately so I'll do the recipe today.  OK, I never follow recipes so how about I just post a couple of suggestions?

This week I made a couple of things that I really liked.  The first was Asian Lettuce Wraps.  Take many liberties with this and throw in what you've got or what you like.  Here's what I did:

3 boneless, skinless chicken breasts diced small - I marinated them in a concoction of smoked Teriyaki sauce, Hoisin sauce, Oyster sauce, sesame oil, 3 cloves of mashed and minced garlic and fresh grated ginger.  You could just use bottled stir fry sauce.  I think I let the chicken sit in the fridge for a couple of hours.

The rest of this I diced fairly small because it all had to be rolled in Romain lettuce leaves

A couple of grated carrots

A can of water chestnuts - diced

1/2 a red bell pepper - diced

8 ounces of chopped mushrooms

4 green onions - diced

Zest of 1 orange

I threw a little olive oil in the bottom of my wok (any skillet will do) and started browning the chicken first.  When it was just about done, I started adding the veggies in the order listed above and cooked them fast and hot so they stayed a little crisp. 

As soon as everything was cooked up, I layed it in big leaves of washed and dried Romaine lettuce.  This was healthy and fresh.   I've got some left so am going to heat it up and serve it over brown rice later.

OK, the next recipe is a little weird so I don't know if anyone except me is going to like this, but I LOVE this stuff.  They serve it in Chicago at street fairs.  I have NO idea of the measurements so wing it - I always do.

Corn with Attitude

Corn - I usually roast the corn and cut it off the cob, but you can use thawed frozen corn just as well.  Just make sure the corn is cold.

Mayonnaise - Again, you have to experiment and use as much as you want.  You can't taste the mayo when you're done.  I use the light stuff.  You're going to want enough to just coat the corn and not make it soupy.  I think I might have used about a 1/4 cup for about 2 cups of corn kernels

Hot sauce - I like Red Devil or Busha Browne's Pukka Hot Pepper Sauce - The mayo cuts the heat in the sauce and the sauce cuts the mayo taste, which is good becase I really hate the taste of mayo.

Cayenne Pepper- You might want to leave this out if you don't like your food too spicey or hot.  I just use a sprinkle

Grated Parmesan or Parmigiano Reggiano- Not the Kraft stuff, but fresh.  Start with a 1/4 cup and see if you want to add more.

This is a cold dish and you just mix the ingredients to taste.  I'd been thinking about this stuff all week and finally made some tonight when I got home.  No sooner had I sat down when the cat sneezed in my bowl.  Arrrggghhh!  If you knew my cat, you'd know what a tragedy this is.  This cat is the only feline I know that actually has snot.  She sneezes all the time and I have to go along and wash the walls about 8 inches from the ground.  The dog appreciated the corn. 

I really stink at passing along recipes, but maybe these might give you some ideas.

I'm really proud of both of you.  She didn't give up and neither did you.  I remember some of your posts when you went toe to toe with the school.  Good for Rachael and good for you.

RACHAEL GRADUATES!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!....Im so proud...Im waiting for her to come home from the rehearsal...I have decorated the house...balloons, made a big poster, roses, you name it, I did it....My baby made it and didnt give up, she is getting her HS DIPLOMA !!!!!!!!!!!!

Back when i first started my journey for surgery a good friend and I had started it all together. In fact she had her insurance ok before me. I really thought she'd have had the surgery first but she needed to quit smoking and just wans't ready to do that.
now over 5 years later she's ready to start it again.
tonight i went with her to her first meeting where our doctor speaks. I went with her because of how we had begun this all together all those years ago.
it was so interesting! alot of the things I had forgotten he talked about. And all the things I remembered! I was bobbing my head and wondering if I was the only one there that had already had the surgery. He looked at me and remembered but he didn't say anything. He nodded & i just smiled.
My friend now starts all the doctors appointments and weekly support group meetings that he requires. I have volunteered to join her at the support group meetings. in a way it was a help for me. to remember all that i had done to get to where i am.
the room was filled. all those hopeful people. i was one of them all those years ago. i've gotten so use to being the size that i am that i forgot how i antipated all that was happening.it was nice to get that reminder!
There were so many large people there. no one made eye contact with me! they didn' trealize i was one of them!

why at this time of the night does all of these things have to float around in my head and keeep me awake?
the list can keep growing the first thing and the last thing on it are the worst! AND I LOVE my job! Just got alot going on right now. thats the key theres alot going on. not enough time to do it all. not enough hours in a day.
my cat lily is liking me sitting here she's getting extra unplanned lap time.
O and another thing why is it all of a sudden i am noticing more grey hair? can i blame that on the surgery? i dont think so but hey its worth a shot!
a good friend of mine is going for her info meeting tomorrow or woudl that be today at night time? i'm going with her for support. the two of us had started out together over 5 years ago. in fact at the tiem she was approved before i was but wasn't ready and changed her mind. now she is ready.
now i'm going back to bed.

she's actually very well known her names is Dr Fran Storch ND shes just a few miles down from the east brook mall.
I heard about her from a customer in Jewett City which amazed me becasue they are so far from each other. The customer in jewett city is one  of the health food stores that i go to. i like the owners alot. thye are very knowledgeable abuot their products and issues that yo hear alot about today like celiac.
i went in there one day after visiting my surgeion and his dietician asking for help because i was not better and didn't like what they had told me. He suggested her. She's been fantastic. I'm sure you would like her.
She takes the time to talk to you you are not rushed and she listens. To everything you tell her. Nothing is a small thing she wants to know it it helps her to figure out what to do. She has another by pass surgery patient too. She hunts to find answers and if she can not help she will get you to the person who will.
I would almost bet money Reenie that she would find a thyroid, vitamin D, vitamin B12 just to start issue. She runs more extensive blood work than what we get at our doctors. She also is not satisfied with lumping everyone into a set box or number. So if my number is within a normal range but i am having issues that go along with something not being right she takes care of it.
i go to her again in august.
