Most all of you know that I look for interesting and fun ways to continue to eat while getting the stuff we really want....

After I converted about a hundred people over to the NECTAR brand of protein powder flavor called Caribbean Cooler, I thought about ways to increase my fiber while drinking the required protein...and BOOM...there it was Aloha-nu  Coconut fiber!  So much fiber that it negates any of the carbs and SOOOOO TASTY!  It only has a hint of coconut flavor but after I started to add it to my protein, I noticed something interesting.....  one week later I was in ketosis (fat burning mode) without any new changes to my diet except for that.... many of you know that I've been trying to stop losing weight and gain a bit back, so I check to see if I'm losing or gaining with the scale and ketosis strips.....the fiber put me in ketosis and I went from a tan trip to a dark purple strip in a week....  so if you're stalled...this is a wonderful way to help get you backinto fat burning.  I've decreased the amount of coconut fiber I was taking and found the ketosis has slowed....so I've got to find a compromise....  but this was too awesome of a find to keep to myself...  plus I bake with it, I sneak it into people's soup or drinks.... and OF COURSE  my main meal of Flaxseed hot cereal (flax-z-snax) and it tastes awesome!  here's some stuff i pulled up about it:

Coconut is an ideal source of dietary fiber. Coconut has one of the highest percentages of fiber among all plant foods. Seventy-five percent of the total carbohydrate content is fiber. In comparison, the carbohydrate in green beans is only 30 percent fiber, in okra it is only 25 percent, and corn it is 18 percent.

Because of its high fiber content, coconut makes an excellent source of dietary fiber and is now available as a dietary supplement. Coconut dietary fiber is made from finely ground, dried, and defatted coconut. Coconut dietary fiber has a higher fiber content than many other fiber supplements. It contains four times as much fiber as oat bran and twice as much fiber as wheat bran or flaxseed meal. Unlike psyllium husk and wheat bran and most other sources of dietary fiber, coconut tastes good!

A tablespoon or two of coconut dietary fiber can be added to beverages, smoothies, baked goods, casseroles, soups, and hot cereal. This is a simple and easy way to add fiber into your daily diet without making drastic changes in the way you eat. Another way to add coconut fiber into your diet is by using it in your baking. You can replace up to 20 percent of the wheat in a recipe with coconut fiber and still end up with good results. This would greatly increase the fiber content of your baked goods without altering the taste.

Coconut dietary fiber has all the benefits of other dietary fibers, it lowers risk of heart disease, help prevent cancer, improves digestive function, helps regulate blood sugar, etc. It also has several advantages over most other forms of fiber including relieving symptoms associated with Crohn’s disease, expel intestinal parasites, and improve mineral absorption.
Let’s take a brief look at some of the benefits of coconut dietary fiber.

When we eat adequate amounts of fiber, intestinal bacteria flourish. Harmful bacteria and yeast, such as candida, which compete for space in the intestinal tract, are kept under control.

One of the most important reasons why friendly bacteria are important to our health is that they produce short-chain fatty acids (SCFAs). Short-chain fatty acids are fats that are synthesized from dietary fiber by intestinal bacteria, and which are vital to our health and the health of the colon.

While these SCFAs are harmless to our tissues and friendly bacteria, they are deadly to many forms of disease-causing bacteria and yeasts that can infect the intestinal tract. SCFAs can kill these troublesome organisms. The benefits which intestinal bacteria provide us are dependent on the amount of fiber we feed them. The more fiber we eat, the more friendly bacteria will thrive and produce SCFAs, thus keeping our colon healthy and nasty microorganisms in check.

Another benefit is their ability to pass through cell membranes and into the mitochondria without the aid of special hormones (insulin) or enzymes (carnitine). Therefore, they can easily enter the cells in the colon where they are utilized as fuel to power metabolism. SCFAs are an important source of nutrition for the cells in the colon. In fact, SCFAs are the preferred food of colonic cells.

The fiber in coconut acts as food for gut bacteria. Consequently, coconut helps increase SCFA in the gut and helps prevent and relieve symptoms associated with Crohn’s disease, irritable bowel syndrome, colitis, and other digestive disorders.

PLUS....you can bake with coconut flour with basically ZERO carbs...that means you can make fried chicken with ZERO carbs and it's great for helping you lose weight!

lots of great things you can make with their poducts....  check them out.... I use a ton of coconut products simply becasue i cook with it nearly daily for guests of mine that want my low carb treats.....

I got the fiber and the flour-thinking of mixing the flower with some panko bread crumbs (and maybe a little of the fiber too-I also throw in ground flax seed).....all that makes a nice crunchy batter-you dip your shrimp or cut veggies in egg, then the mix, then bake it (I like mine really a bit overdone so it's almost black)..........mmmmmmm mmmmmmmm good.

I'm thinking a nice slice of pineapple rolled in that stuff and baked till crunchy would be pretty tasty too-probably messy and not too pretty-but tasty as all get out.  (Adds pineapple to shopping list)
