I make blueberry pie using the recipe in the Better Homes and Gardens Cookbook, but use Splenda instead of sugar.  My family raves over it.  It is blueberry season, so they are ripe, sweet and cheap.

That is my suggestion.

Good luck,
Trish

Simple and silly but here it is. Graham cracker crust - 2 boxes sf vanilla instant pudding, 2 3/4 cups skim or 1% milk, mix according to package - and for the 4th I put a ring of blueberries, then sliced strawberries, blueberries, strawberries - it was delicious and very patriotic looking (and pretty) and was a huge hit yesterday.

I'm not sure it would win any prizes in a pie contest because it's pretty plain and simple....

1 container "free" cool whip
1 box sf jello (I prefer lime or orange)
1 6 ounce container of same flavor container sf yogurt (IE use lime yogurt w/ lime jello)
1 6 ounce container of greek yogurt

Mix jello w/ 1/4 cup boiling water.  Stir till dissolved.  Set aside for 5 mins
Mix cool whip w/ both yogurts
Stir in jello mixture till combined

Pour into graham cracker crust and refrigerate at least one hour.

You could decorate it with some extra whip cream and a slice of lime (or whatever flavor you made...)

You know me and measuring...

I use 1 bag of frozen black cherries
some cornstarch
almond extract
splenda

Toss frozen cherries with about 2 Tablespoons cornstarch, almond extract and splenda. (the cornstarch allows the juices to thicken) you can do this on the stove top too and pour into a baked crust then just bake a bit until the crumb topping is set up

you can use a refrigerated crust or make your own. I prefer to make this with a crumb topping

1 stick of butter
flour (or almond flour)
pinch of salt
brown sugar substitute
pecans (or any nuts you like)
oatmeal

combine  until a moist crumble - top pie and bake about 45min - hour

Love this one too! Can do this with blueberries too

Liz,

I would love to have your peanut butter pie recipe.  I made an attempt for the 4th but my experiment was not that great.  It certainly would not win any awards in my book.

Thanks

Kate
