Alright...here's the game plan and under neath is what I have packed "just in case" I don't get to heat up food or whatever....

B:  Yogurt w/ berries
S:  String cheese
L:  Ham and cheese on flat bread thing
S:  Chicken soup
D:  Probably left over shrimp

"Extras"  String cheese, Ricotta cheese w/ splenda and cinnamon, Protein shake
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.

Beth, what/how do you make TVP mock fried rice?  I have TVP and have used it in meatloaf, hamburger, oatmeal, muffins . . .  but never heard of mock fried rice using TVP.

I got this from the Maryland board.  I had to make some changes because I have food allergies and have to be careful with 'Chinese' food.  I couldn't find the Chinese 5 spice so I got  stir-fry oil only to get it home and find out it is peanut oil!  gggrrrr.  So after some creative switcheroo I made it... just haven't been brave enough to try it!  Hope you like it.

Mock Fried Rice

Ingredients

1 c. TVP
7/8 c. hot chicken stock
1 1/2 T sesame oil
1 lightly beaten egg
3/4 c. Birdseye classic mixed veggies or a combo of peas and corn
1 c. diced sweet onion
3/4 c. cooked and diced pork (or chicken or shrimp)
1/2 tsp. Chinese 5-spice
1/2 tsp. garlic
soy sauce to taste

Add TVP to the hot chicken stock and set it aside. Add oil to a heated wok or skillet, and when the oil is hot, add onion and sautee until soft.  Add the rehydrated TVP, frozen veggies and pork. After stir frying for about 2 minutes, make a hole in the bottom of the wok by moving everything to the sides and add the beaten egg, chinese 5-spice, garlic, and soy sauce. After 30 seconds, stir everything together and stir for about a minute or two, then remove from heat and serve

I just tried it and I really, really liked it!

I am going to look up more recipes using TVP!

B:  Scrambled egg beaters with chicken garlic sausage and naturally slender cheese
S:  Fresh pineapple, 2 cocopops
L:  Tomatoes, balsamic (homemade, light), basil and fresh mozzerella
S:  Activia strawberry yogurt
D:  Roast beef rollups with scallions and lite cream cheese

E:  35 mins treadmill, decent incline and pushing the pace this morning
