Chicken Cordon Bleu

CHICKEN CORDON BLEU Serves 4 or more.

Here's the perfect dish for when the boss is coming to dinner. Great for entertain anytime! Fast, delicious and ready from start to finish in less an hour!

4 5-oz boneless chicken breasts

2 cups fresh baby spinach

4 oz sliced extra lean deli ham

4 slices low fat Swiss cheese

1/4 cup shredded parmesan cheese

1 teaspoon dried thyme

white pepper

olive oil nonstick spray

Preheat oven to 375 F. Spray baking dish with nonstick spray or Misto oil mister. Slit chicken breasts through the middle lengthwise to make a pocket. Sprinkle thyme evenly over 4 ham slices and top with spinach and Swiss cheese slices. Roll up and stuff into the chicken pocket. Spray top of chicken with cooking spray or Misto and press parmesan cheese on one side only. Place plain side down in baking dish. Cover with foil to prevent early browning. Bake for 35 minutes, remove foil and bake for 10 minutes or until cheese is lightly browned. Serve & enjoy!

I hadn't thought of encrusting one side with the parm - sounds like a great idea!  I have also brushed the chicken breasts with some dijon mustard when making cordon bleu and ppl seem to like that a lot :)
Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.
