Ice Cream Recipe for my lactose/soy intolerant friends!

Alright so I've been experimenting because I really wanted ice cream and something soft and creamy like Dairy Queen... Here's what I came up with and it is darn tasty!

1 envelope unflavored gelatin
1/4 cup cold water
1 cup chocolate almond milk
1 cup malitol
1 teaspoon vanilla extract
1 teaspoon instant coffee
1/4 teaspoon salt
1/4 cup cocoa powder
1 1/2 cups chocolate almond milk

sprinkle gelatin over water and set aside

heat 1 cup milk to just below a simmer (I microwaved it for 2 minutes), stir in malitol, vanilla, coffee, salt and cocoa powder. Let cool

Stir in gelatin mixture and remaining almond milk.

Let chill for 4-6 hours. Pour into running ice cream machine and churn until set

You can freeze this or eat it is - YUMMY! I am going to top mine with sliced bananas or strawberries (or both! lol)

yummmm... I think we need some sort of ice cream at the next cooking class.  I just got my machine, but have no room in the freezer right now so I can't make anything.

I didn't say this cooking class, lol

And shhhhhh....I'm soooo stressed at work recently I just *may* call out that Saturday.  I have to check my PTO balance and figure out if it's within a certain time period of me calling out last....I doubt I'll have the gumption to actually DO it....but it has crossed my mind.

And besides....I could always pick some up, lol

ok - between this and the one eggface posted yesterday for mint-choc-chip protein ice cream, it seems the universe is telling me that my new kitchen NEEDS an ice-cream maker.  Sigh.
