OMG!!! MEL'S CROCKPOT RIBS!!!

Home Style Ribs -Crockpot Recipe 2 to 3 pounds of Country Style Ribs, I normally get about 2 pounds or so... 1 tbsp. oil 1 lg. onion, quartered and sliced 1/4-1/2 inch thick Sauce I mix it all together in a large bowl... 1/3 cup low sodium soy sauce 1/2 cup ketchup 1 tbsp. yellow mustard 3 tbsp brown sugar 2 cloves of garlic minced dash of black pepper 2 tbsp apple cider vinegar 1 teaspoon celery seed (optional, I do not use this) Heat a lg skillet with oil and brown the ribs, I will season with onion and garlic powders, and some season all...just brown both sides...then transfer to crock pot. Place chopped onions on top of Ribs Mix all above sauce ingredients; and pour over ribs and onions... cover and cook on low for 8-10 hours... I normally serve this with country potato salad and corn on the cob and a tossed green salad... Watermelon for dessert, or my 'funeral dip' with fresh strawberries... Funeral Dip recipe 1 container of Strawberry Cream cheese 1 jar of Jett Marshmallow fluff place both in a microwave bowl heat until you can mix them together.... serve in small bowls with fresh strawberries... BON APETIT!!!

I mixed up the sauce and chopped the onions last night. Janet browned the ribs and threw everything in the crockpot this morning. I had to go run some errands for school and they were smellin' GOOD when I got home this afternoon!! I had to run into Austin to go to the Austin Community College bookstore and buy my textbook & supplies for my nursing skills class that starts on Monday. Then I went to a uniform shop to order my scrubs & lab coat and try on shoes. I finally feel like things are REAL, know what I mean? I start the actual ADN program in the fall. I am so EXCITED!! Shoes are the thing that I am most concerned about. My last job was in the semiconductor industry. I was on my feet for 12 hours straight. Sounds like nursing, huh? Of course, it was before WLS and losing 125 pounds, but my feet killed me at the end of the day. When I got laid off from that job, I had only lost about 70 pounds, so I don't know how I'm gonna do now. Do yo have any recommendations on shoes? I'm looking at some called Z-Coil. But they are rather expensive and I just don't have the funds right now. I can get a 20% student discount at the uniform shop where I had to get my scrubs from. That might be best for now, then I can get the other shoes later. I decided that I wanted to be a nurse when my partner, Janet, was in labor with our daughter. We have a fabulous OB/GYN, but those nurses ROCKED!!! The day after Emily was born, I told Janet that I wanted to be an L&D nurse. BUT I had this damned job that paid me a LOT of money, so I didn't have any incentive to go to school. The day I got laid off, I came home and told Janet that I was going to nursing school. That was in mid-December. By January, I was registered for 2 classes. And here I am, starting nursing school in the fall. It took me 2 years to complete my pre-req's, but I'm ready, now!!
