WLS Express - Sunday
Good morning Train Riders!!! Ready for church, took the dogs out already and am eating my omlette. I had a great day yesterday. Got to hang out at Starbucks with lots of folks and it was just what the doctor ordered. Cooked my first ever turkey yesterday. Turned out pretty good, a little dry, but my intention is to use all the meat in recipes so it will be ok. I did decide that cooking turkey is way over rated. Way too much clean up for the amount of food.
Church today, lunch with the in-laws then off to get hair cuts for both me and Jeff. I need a style update and Jeff's getting a bit shaggy so it's time to do it again. I have to get to bed early tonight as tomorrow I get my incision stiched up again then I'm off to work. I'm pretty sure I won't actually be able to do any work tomorrow. They turn off all our network access when we are on leave, and in theory it should all be working tomorrow but I know how things really go. I told my boss I was bringing a book to read since it'll probably take them most of the day to get everything working.

OK Deb, I'm confused. How did you cook that turkey? I use one roasting pan and cover it with aluminum foil. That's the only thing I have to clean other than the knife I use for carving. Cooking a turkey is one of the easiest things to cook and gives me tons of meat. Afterward I boil the carcus and make KILLER turkey noodle soup that fills my freezer for the whole year. (and I do that in the same roasting pan).
Enjoy work tomorrow, it sure is hard to go back after having so much time off.

ok im with you lol. Turkeys are easy. Im like you - one roasting pan, covered in foil and i put the turkey in onna those oven bags. I have even thrown the carcus in the crock pot with onions celery etc when i cant be at home to watch it. hmmmm lol. Apparantely we need to teach deb turkey cooking 101 :)

LOL, ok I think this was a combination of me not being 100% satisfied with how the meat came out and then having to spend the time to get all the meat off the carcass and chopped up. Plus it was 9pm by the time I started working on the "clean up". One roasting pan was the only dish I had to wash, but then there were little bits of turkey all over the counter (the dogs were happy about that as they got the small scraps). I've got enough turkey for at least 8 meals with leftovers, so money wise it was a good investment. I just wasn't thrilled about the meat. I think I cooked it too long cause even cooking breast side down the breast was pretty dry.
