July 4th food ideas needed...

In need of some high protein food ideas for the 4th of July holiday.. I'm still not able to eat alot, and meat is sometimes hard.  So Im thinking of sticking to some high protein side dishes..

Any ideas that you all may have will be great...

I just made a high protein blueberry cheese pudding using the recipe the NUTS gave us in the briefing binder.  Let you know how it tastes later.

1 pkg. gelatin
3/4 cup water
1 1/3 cup cottage cheese
6 teaspoons of splenda
1 teaspoon vanilla
1/2 teaspoon orange extract
1 cup fresh or frozen blueberries (if frozen drain well)

Sprinkle gelatin on water in a sauce pan.  Heat gently, stirring constantly until dissolved.  Combine remainder of ingredients and 1/2 the blueberries in a blender.  Pour in dissolved gelatin mixture.  Blend until smooth.  Distribute remaining blueberries in four small dishes.  Pour mixture on top of blueberries. 

You could top with Stawberry for the Red White and Blue effect.

Turkey meatballs are nice and soft and really good on a toothpick with maybe some marinara sauce.  Homemade turkey chili is really good too.   Enjoy the holiday  :o) jeani

Ribs! You can do these on the BBQ or you are not a BBQ handy person do these in the crockpot like I do. You can do a sugar-free bbq sauce like this one:
