Big Eyes, Small Tummy Conundrum and NOT feeling like a stuffed sausage.
I am two years out and I still could not eat the amount you describe. My typical breakfast now, is two eggs OR one slice of protein bread, one wedge of Laughing Cow cheese and one fried egg on top. Usually, it is just the two sunny side up eggs and that's it. I eat veggies in between meals as my snacks.
I get what you are saying about satisfying your eyes as well as your tummy. At about my 3-4month post op mark I acctually went through a bit of depression about the same issue. I was missing food and what I was putting on my plate didn't look appealing nor did it "look" like enough to satisfy me. I still struggle with the whole "eyes are bigger than my stomach" thing.
I personally think your diet looks just fine. It is extremely hard to eat all your protein requirements early out, add a shake, protein bar, protein coffee at the end of the day (or start) if you need to, but don't worry at this point about meeting 20gr in one me. Heck, I don't even do that at 9 months out. Atleast not in one plate sitting.

Hmmm... I guess part of what I'm wondering about then is if it's normal that I AM able to get all of my protein needs from food, but that my 20gm protein meals must be split into two portions (one for now, one for a bit later). So I guess in reality I am making several smaller mini-meals out of all of the food that I prepare for one meal.
It's a good thing I don't mind eating cold food because it happens a lot. :)
I know a lot of the veterans on this board promote UNDER-eating our sleeve, and I'm interested in learning and experimenting with that. I definitely do not want to over-eat it or stretch it out, and so far I haven't, I don't think (at least I hope not!). I have never thrown up or had foamies/slimeys or whatever. When I feel like it's enough, I stop. If there's still more on the plate and it's protein that I've "counted" for my goal, I either take a break and get up from my meal and fini**** in a bit, or I put it into a container or baggie and make a full second go at it later on in the day/evening.
Again, I think it's all just part of my learning curve, and I do think I'm doing pretty well so far. Maybe I just needed the validation and to bounce these thoughts off of other people's brains! Thanks to everyone so far who has responded to this post!

You're eating a lot more than I can. Remember, eating over a long period of time - grazing - can stop your weight loss or lead to re-gain. I'm talking about going back to your breakfast 45 minutes later to fini**** Start with a small amount and let it go at that. We don't belong to the clean plate club anymore, remember!

A lot of days I just have two of those Morningstar sausage patties for breakfast. Maybe some Greek yogurt or cottage cheese before or after, but often nothing else. Two of them is 20 grams of protein and 160 calories, so they're a good start to the day without a whole lot of volume. And even though they are small, two of them fill me up for a couple of hours.
