Any Good lunch ideas??????????
I'm looking for some good lunch ideas that i can cook on the weekend and bring into work and zap in the microwave. A few weeks ago i did a bunch of weekend cooking and freezing. Kimbethin gave me a great recipe for meatloaf that i baked in muffin tins and so i had mini meatloaves and i made a lamb stew and i made chill. Now i need some other ideas, since i tend to eat twice a day in the office. As long as the microwave won't change the texture of the dish I'm good with it. Also high on protein is a must but no fish. I notice it stinks up the office when microwaved. Any ideas would be great. Thanks in advance.
I made a couple of crockpot dishes this weekend that would warm well. My program does not allow: bread, pasta, rice or potatoes ever! Just wanted to clarify that first. I cut cauliflower into big chunks (instead of potato) onions and red peppers for color. Then browned a couple of chicken thighs. Loaded it all into the crockpot. Put in chicken broth. Seasoned with garlic pepper, sage, rosemary & thyme. And cooked until done. Super yummy. Then I tried a variation of same where I substitued beef for the chicken, did beef broth and seasoned with fajita seasoning, garlic pepper and garlic salt. Only thing I would change on either is maybe substitute veggie broth for the beef broth (it was kinda heavy. Hope you like them.
I do 2 items monthly----
---I cook 2 of those Hormel Extra Lean Pork Loins and cut them down.
---Then I baggie up a measured portion and add about 1/4 cup of frozen veggies (whatever you like).
---Freeze all the little baggies and ta-da---you have meat and veggies to go.
---I do the same with a rotisserie chicken and frozen veggies.
They usually thaw in the fridge and then you can just zap the baggie to get it hot. You could even add a sauce like salsa or tomato sauce. Whatever you like.

Brandylinn gave this recipe and I eat it almost everyday now, still not bored of it and I love it! Its called Buffalo Chicken salad and its loaded with protein, this is how I do it...
take all the breast meat off of a rottiserie chicken and cut it up really little
Cut up two stalks of celery (if your far enough out to have veggies) My NUT said as long as they were really small and didn't cause me issue it was ok
One 6oz container of Fage Greek 0 fat yogurt
two tlbs of Franks Red Hot Buffalo wing sauce
A dash of Blue Cheese or Ranch dressng (depending on my mood)
Mix together....now most of the time I just eat it cold a little under 1/2 cup and my sleeve is happy, but lately I've tried heating it with a little 2% cheddar shredded cheese on top and dipping celery stalks in it! Just like wing dip YUMMMMM
That gives me enough for all week, and the kids/husband usually eat the dark meat and wings for lunch on Sunday so it kills two birds with one stone!
Even if you don't typically like greek yogurt this totally masks the tast of it and this recipe is like 90 calories for a 1/2 cup!.

Thank you all so much for the great suggestions. Just headed out before home to Whole Foods and picked up a rotisserie chicken because i have all the ingredients for that dish and it's gotten warm here again. When i do a shop I'll get the ingredients for some of the other dishes here. It's such a learning curve.
