Looks awesome. Now I know what I will have for brunch tomorrow.

...I would probably leave the taco bell sauce out (not big on that kind of flavor) but the rest of it looks pretty good...how much ground chicken do you put in there?

About 2.5oz. cooks down to about 2oz. after cooking.........

2oz. meat and an egg is a good baseline.

Most meats are around 50 cals an ounce and an egg is about 75cals. this leaves a little room for some condiments.

I'd probably add some shredded cheese or add a green pepper to the veggie mix...still sounds good...I'll give it a try :)

That's the beauty about this concept........ whatever is on hand is open game.... great way to use up leftovers and fridge items..... just add an egg !

I have several other egg/frittata examples at Cafe Frisco

Did a variation of this just today - couple of ounces left over brisket, 1 egg, 1/2 shredded cheese, a little hot sauce and 1 tsp of Fage 0% instead of Sour Cream. Damn tasty.

Eggs really are great! They got such a bad rap for a while, too.

Thank you Frisco!

I don't like to cook but I cook a ton of chicken in bulk and just pull it out and heat it up daily. I don't mind making an egg some mornings and it's quick and easy. THIS is something I can make! I'm always on the go with my kiddos and college but this is def something I'm willing to try. Thank you. I will try it tomorrow morning.
