Recipe of the Day - Back By Popular Demand! - Fried Cabbage

The people have spoken (well two of you anyway), so I will post recipes again!

My mother has made a recipe for as long as I can remember. Its a German recipe for fried red cabbage and it is really good but not exactly low carb friendly. Last night I made a small twist on it but I wanted something fast and easy:

1 Bag of Cole Slaw Mix

1/2 lb of Bacon (sliced across the slices to make small pieces) (if you can find grass fed it will be the healthiest bacon you have ever had)

1 Sweet Onion (halved and sliced thin)

1 TBSP of Refined Coconut oil (refined Coconut oil does not have the coconut flavor) (olive oil is fine too)

1/4 cup of Braggs Apple Cider Vinegar

In a large pot or dutch oven over medium/medium-high heat saute the bacon until just before it gets crisp (sometimes I like it to crisp all the way), throw in the onions and coconut oil and stir until the onions begin to soften. Add coleslaw mix and stir until coated with the bacon grease and coconut oil. Stir occassionally. Once the cabbage starts to soften add in the vinegar. Continue to cook over medium heat until the cabbage soften and some of it starts to brown a bit. Salt and pepper to taste.  I also add some minced garlic to this and last night I threw in some broccoli about halfway through because I needed to use it up and I have not been getting enough veggies lately.

This of course would be a veggie side dish, but its low carb and you get some protein from the bacon but certainly something you would want to have with a steak or chicken. Its fast and easy and tastes great.

I have been on a real cabbage kick lately, not sure why. I even thought about putting it in the chili I made yesterday. I know I am not getting enough veggies and that is an easy way to put some fiber into, well, anything.

I used to make this all time, and have made it once since surgery. I add sliced carrot, too. I call it "bubble & squeak" though :) Oh, and I just buy a small head of green cabbage or use one from my garden. I've used purple cabbage before, too, though.

Grass fed bacon???  Really?  No idea pigs ate grass.  Any excuse to sample a little bacon though--I'll look for it.
