I LOVE borscht! Hot, steamy, winter comfort food! My mama never put the beets in it when I was little because I didn't like them. Then when I was older she taught me to appreciate beets by grilling them and sautee-ing the greens. I am still not fond of them pickled on a salad (Yuck!) but I love them roasted and in borscht.

Anyhow, ours is beef stock and beef with lots of cabbage, potatoes, beets (and I will always use the white or golden beets if available), celery, onion, carrots, lemon, garlic, juniper berries, bay leaf, pepper, etc....

L: 1/2 sandwich, ham, light oatmeal bread, peaches, really like peaches. 100 cal. greek yogurt

D; Baked fish w/cheese protein sauce & vegs.

I'm waiting for my abdomen to forgive me for making it sit in a car for two hours today before I head off to bond with the treadmill at my gym. I want to get back before I've lost a super noticeable amount of weight so I don't have any explaining to do.

B: Coffee w/non dairy creamer....1/2 hr later-Protein shake w/1 cup unsweetened almond milk

S: Cheese stick

L: 4 oz Roasted turkey breast, 1/2 cup Collard green

D: 4 oz Grilled Elk steak & 1 cup green beans

S: Protein shake w/1 cup unsweetened almond milk & 1 scoop of Miralax

 

X: 35 mins elliptical, 20 min strength/weight training & abs

W: Working on it

V: Done
