Winner, Winner....Potluck Dinner!!! :)

Earlier this week, I posted I would be attending a Potluck/Carry-In Dinner for the first time post surgery and was looking for possible high protein-low carb suggestions. 

I ended up preparing Frisco's Thai Chicken Satay and taking it.  OMG...was it yummy!!!!   It was a HUGE, HUGE success and the favorite item of the evening among everyone who tried it. In fact, several people asked for the recipe. :)

OH this looks fantastic!  I'm going to have to give it a try!  (I'm a recovering thai food addict :)

I love Thai food as well.  People just raved and raved about the dish. By the time I was done, I had shared the recipe's website with 60 people.

I will make it at home again.  I will also plan having it as a carry-in "go to" dish.  I got some other great ideas and will add them to my "bag of ideas".  

As a side note: there was a couple of good protein options at the dinner and a whole heck of a lot of "not on my plan-not even happening".   Someone did bring sliced turkey breast (as in a real turkey, not lunch meat crap).  Someone else brought deviled eggs made with Greek yogurt and mustard (they had a little card sitting next to them stating their "healthier version".  There were several other kinds of deviled eggs as well, but the ones made with Greek yogurt seemed to go just as quickly as the others.
