If you like Chinese Chicken Salad you have to try this!!

From a recipe I adapted to our WOE

Chinese Chicken Salad with Red Chile peanut Dressing

Dressing:
1/4 c rice wine vinegar
2 TBS peanut butter
1 tsp ginger
2 tsp red chili paste (I used Siracha)
1 TBS soy sauce
1 TBS honey ( I used SF honey)
2 tsp sesame oil
1/4 c canola oil
salt and pepper to taste
** I squeezed 1/2 a lime and added it but you can omit it if you want
Whis****il smooth


Salad:
1/2 head Napa Cabbage, shredded
shredded carrots
1/2 English Cucumber cut into matchstick pieces
1/4 c coarse chopped cilantro
1/4 c green onion
sliced almonds
Rotissere chicken cut into bite sized piece

This makes A LOT of salad but I just store the dressing seperate from the salad and spoon some on when I eat it.

You guys...this is so good.  I can see adding a few mandarin oranges or some chopped peanuts instead of the almonds.  Or add some snow peas!

If I could have eaten more than a cup i would have.  It was almost too good to stop.

SF honey?  Never seen it is it in with the regular honey?  Sounds good.  I will have to try.

My Walmart has it.  It is w/ the regular honey and costs less than real honey but does contain malitol.  Sometimes I just use regular honey b/c its only 1 tbs.  HTH

Thanks Jemma, it sounds absolutely delicious.  And, its a new way to use the rotissere chickens.  Can't wait to make it, maybe Sunday.  mmmm looking forward to it.   Thanks again for taking the time to share this.
