Alfredo sauce - what can I put it on (other than pasta)???

I recently saw a recipe using "zucchini noodles." Peel your zuke and then peel off ribbons with a veggie peeler. Nuke them for about a minute, check to see how done they are, and then nuke in 15 second increments till they are your desired consistency.

I find spaghetti squash to be INCREDIBLY dense and overfilling, so use caution in your portion size when you try it :-p.

I make my own (full fat and all) for the family on occasion. I make chicken and broccoli fettuccine. I just eat the broccoli and chicken with the sauce. It's delicious. I don't worry about fat, only carbs.

I am not sure about Alfredo sauce, but I like to have spagetti sauce over french cut green beans.

Wow, Terry, you brought back a memory from my childhood!  My Mom used to make something she called "chopped meat and string beans", which was browned ground beef and green beans mixed with tomato sauce.  It was the only way she could get me to eat green beans!
