I LOVE this stuff, I use it in place of other spreadable cheeses. When I make it I store it in infused oils (garlic, rosemary, hot pepper, etc) in small jars so I always have a selection. I use homemade yogurt, but you can do it with any store bought plain yogurt too!

I have always wanted to make that.  I am going to give it a try with some Plain Dannon Activia, it is my fave.

Thanks for the info.

Another good thing to do with it, make a small batch from a sweet flavored yogurt (I like lemon), then spread it on an english muffin or bagle and broil for a minute, it tastes just like a cheese danish without all the fat and calories. You can also keep the wehy that drains off and add it to soups or when cooking rice to up the protine in it!

Well, the batch I put up looks the one in the pictures. I will probably let it drain until tomorrow before I taste it, though.

Question: Does anyone know what the protein content of this would be? If the whey that drains off is useful for adding protein to other dishes, I wonder how much protein remains.

according to caloriecount.about.com it has 6 grams of protein/oz, hope that helps!

6 grams of protein per ounce? Did I get that right? Sounds wrong....
