Buffalo Chicken Lasagna (the bleu cheese crumbles give this a more authentic flavor but can be easily omitted with no harm to the recipe!)
9 whole wheat lasagna noodles, uncooked
1 lb. boneless, skinless chicken breast, cubed
3-4 cups Classico Basil Tomato Spaghetti Sauce
1 cup mild Buffalo wing sauce
1 1/2 cups water
15 oz. low-fat ricotta cheese
1/2 cup egg substitute
2 T. bleu cheese crumbles
9 slices 2% pepperjack cheese or 1/2 c. bleu cheese crumbles
Preheat the oven to 350 degrees. Spray skillet with nonstick cooking spray. Cook chicken over medium-high heat for 4 minutes or until almost done. Stir in sauces and water. In a small bowl, combine ricotta cheese, 2 T. bleu cheese crumbles, and egg substitute. Spray a 9X13 pan with nonstick cooking spray. Spread 1 cup of sauce in the bottom of pan. Arrange 3 noodles over the sauce. Spread more sauce, then a layer of ricotta mixture. Add another layer of sauce, and repeat the whole process until you end with a layer of sauce. Cover and bake 70 minutes. Uncover and place cheese slices or crumbles on top, then bake for another 15 minutes uncovered. Let stand 10-15 minutes before serving.
** Note: The ingredients can be halved and made in a square pan (break noodles to fit) or cut by one-third and made in a loaf pan!

This is sooooooooooo good! Serve with a salad and you've got a great dinner! If the noodles bother you, scrape out the meat/sauce and cheese and have at it! It's one of our family's favorites. I am asked all the time to bring this to family dinners! My sister made it for a potluck she attended and NO one had a clue it was a healthy dish! Now those are the kind I like!

.......but if it makes you feel better, you were never in trouble with me.
I'm doing the crab cakes tonight (unless someone invites me out for dinner), but this recipe is going on my list of things to try soon. The only problem I have is that cooking for one is a pain....so I go out a few times a week....but food is so much less expensive these days since I generally bring home at least half to 2/3 of what I order and then I have instant meals.
I'll let you know how the crab cakes come out...I think I'll end up having plenty left for lunch.
