I really LOVE the world according to eggface.  You can also use The southbeach diet cookbook.  Diabetic recipes, in general, are great until you get to the carby foods which, believe it or not are too high in carbs for us (my hubby is diabetic and I feed him as I feed myself).  Atkins recipes are fine so long as you watch the fat content. 

You can adapt many recipes by reducing the starchy carbs or making your portion smaller.

Be creative.  Try new veggies.  There are so many more flavours in the veggie domain than I ever realized.
