kiss  I have a kickass bran muffin recipe that has a very similar nutrient level to yours but all natural sweetners and actual bran not  cereal flakes.  If you want it I can send it to you.  They are to die for but def not to eat very often.  When I make a batch I keep 2 and give the rest away immediately.

This recipe uses bran not the cereal ...? little small brown fluffy things? I'm trying to use these so on the odd day when things are just moving tickety-boo lol

Hey Mermaidz,

I notice that this recipe uses Splenda Brown Sugar blend in it. That is a mixture of real brown sugar and splenda, so that's perhaps why the carbs are a little higher. Have you considered using a brown sugar alternative. There is brown sugar twin (which is aspartame I believe) but I've always had success with using regular splenda and SF Maple Syrup to give it the brown sugar taste.

Like Tracey mentioned, you can use protein powder in your baking as well, I like to do that and have had good results with it, you just need to adjust your liquids and baking time. Recipes with protein powder tend to need more liquid and require less time in the oven.

To further limit the carbs and up the protein, you can substitute Greek Yogurt 0% plain for the milk. This chart online offers a handy conversion....

Have you looked on the Ontario recipe forum? I posted this recipe a while ago and it's always been a hit even with non-ops...

Blueberry Bran Muffins

1 cup 0% plain Greek yogurt

1 tsp. baking soda

¾ cup carbquick/ whole-wheat flour

2 scoops vanilla protein powder

3 tsp. baking powder

1/2 tsp. salt

¾ cup splenda

1 Tbsp. Sugar Free Maple Syrup

¼ cup liquid egg

½ cup unsweetened applesauce

1 tsp. vanilla extract

1 cup blueberries, dredged in carbquick/ whole-wheat flour

1 cup bran

1 Mashed Banana

Directions:

1.     Preheat oven to 350 F.

2.     Spray/line muffin pan.

3.     In a bowl mix yogurt and baking soda, in a second bowl, mix carbquick, protein powder, baking powder and salt, in a third bowl mix splenda, maple syrup, egg and applesauce. Add this to the dry ingredients, alternating with yogurt.

4.     Add vanilla extract, blueberries, mashed banana and bran.

5.     Pour into muffin pans and bake for 35 minutes.

Per serving: 87 calories, 12g carbs, 5g fiber (Net Carbs: 7g), 2g fat, 9g protein
