Not sure if you are a member of the Ontario recipe forum but there are quite a few SF dessert recipes there. You can also post in there if you are looking for something specific and someone may have a recipe that they haven't posted yet.
Hi there. Have you ever heard of "Sex in a Pan", or sometimes it's called "Drumstick Dessert". I don't have the recipe off hand, but it is a popular one. I have made it before and adapted it to be almost completely sugar free. It has a graham cracker and peanut crust (but you can use any sugar free biscuit that you can crumble up- try Voortman or LifeStyle brands). It also calls for chocolate pudding, and I use the SF Jello pudding. The only thing I have not been able to find is sugar free cool whip, but I use the "Ultra Low Fat" version. Maybe you can get a SF cool whip from the Low Carb Grocer or if you happen to live close to the US. Anyhow, it is incredibly satisfying and decadent, and very adaptable.
would you mind sharing the full recipe, this is a dessert my family loves, but i ahev never made, and sugar free low fat sounds pretty good to me :)
2 c. vanilla wafers (use any sugar free or low sugar biscuit), crushed
1/2 c. melted butter
1 (8 oz.) cream cheese (I used the ultra low fat)
1/3 c. peanut butter (light, or even natural)
1 c. confectioners' sugar (Splenda)
4 c. Cool Whip (ultra low fat, or SF if you can find it)
2 sm. pkgs. chocolate instant pudding ( Jello SF)
3 c. milk
1 chocolate candy bar (I ususally just sprinkle some crushed peanuts on top)
Mix vanilla wafers, 2/3 cup peanuts, and butter together. Pat in 9 x 13 inch pan and bake at 350 degrees for 10 minutes. Cool. Mix cream cheese, peanut butter, and confectioners' sugar until smooth. Fold in 2 cups Cool Whip. Layer over crumb mixture and refrigerate.
MEANWHILE, mix pudding and milk together. Pour over layers in pan; refrigerate until set. Spread remaining 2 cups Cool Whip over pudding. Top with remaining peanuts. Grate chocolate candy bar over top. Cover and place in freezer. May be served directly from freezer.
